Bar do Juarez is a São Paulo boteco institution, open since 1954 in Itaim Bibi and now with several locations across the city. The original is a loud, tiled room with ceiling fans, marble bar tops, and the particular smell of a place where linguiça has been grilling on the same equipment for decades. The house linguiça calabresa arrives sliced and sizzling in a cast iron pan with onions and peppers, eaten with cold Antartica beer and toasted bread from the counter. The boteco is a São Paulo form: part bar, part restaurant, part social club, open from lunch through the early hours. Bar do Juarez has not changed what it is doing because nothing needs changing.
