Baharan Sandwich is a long-running sosis counter in central Tehran, a narrow shop grilling sosis-bandari the same way it has for decades. The sandwich is built simply: sosis split and pressed on the grill until the spiced casing blisters, then loaded into a soft roll with pickles, tomato, ketchup, and mayonnaise. In Tehran the sosis sandwich is street-level food, eaten standing at the counter or taken away in a paper wrap. Baharan draws a lunch crowd of office workers and students.
