Piedmont occupies the northwestern corner of Italy, ringed by the Alps on three sides and open to the Po Valley on the east. Its salumi tradition is shaped by the region's humid lowlands, which made open-air curing difficult, and by the hills of Monferrato, Langhe, and Novara, where cooler conditions suited longer aging. The region produces a range of cured meats distinct from Emilia-Romagna, including lard-preserved salamis that would not survive a standard drying room.

Salam d'la Duja

A soft Piedmontese salami that spends its curing life submerged in rendered pork lard inside a terra-cotta pot called a duja. The Po Valley's humidity made open-air drying impossible in Novara province, so producers sealed the sausage in fat instead. The result is a salami with no rind, a deep pork flavor, and a texture that stays moist and spreadable well into winter. Not DOP or IGP, but recognized as a PAT traditional Italian product.
