Brussels has its own culinary identity, distinct from Wallonia and Flanders. The city's old working-class neighbourhoods — the Marolles, the area around the Grand Place — carried a local food culture that is now mostly gone. Bloempanch is one of the last traces of it: a blood sausage specific to Brussels, almost completely forgotten, kept alive by a handful of restaurants that still know how to make it.
