Ingredients

  • 500 g spaghetti
  • 2 Maltese sausages, skinned
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 400 g tinned tomatoes
  • 400 ml fresh cream
  • 1 fresh ġbejna, chopped
  • A handful of parsley, chopped

Steps

1

Fry the onion in a little olive oil until translucent.

2

Add the garlic, then crumble in the sausage meat. Fry until the meat is cooked through.

3

Add the tomatoes, turn the heat to low and simmer for at least 30 minutes.

4

Stir in the cream and most of the chopped ġbejna.

5

Boil the spaghetti until al dente, drain and toss it through the sauce.

6

Serve with chopped parsley and the rest of the ġbejna on top.

Tips

Maltese sausage carries plenty of salt, so taste the sauce before you add any.
