  • 400g Nürnberger Rostbratwurst, cut into 1cm slices
  • 1 large onion, diced
  • 2 medium apples (such as Honeycrisp or Gala), cored and diced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 large eggs
  • 1 tbsp butter
  • Fresh parsley, chopped (for garnish)

Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove sausage from the skillet and set aside.
