- 400g Nürnberger Rostbratwurst, cut into 1cm slices
- 1 large onion, diced
- 2 medium apples (such as Honeycrisp or Gala), cored and diced
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
- 2 large eggs
- 1 tbsp butter
- Fresh parsley, chopped (for garnish)
Steps
Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove sausage from the skillet and set aside.
Add the diced onion and apples to the skillet. Cook until softened and lightly caramelized, about 8-10 minutes. Stir in the dried thyme, salt, and pepper.
Return the sausage to the skillet with the apples and onions. Heat through. Keep warm.
In a separate non-stick pan, melt the butter over medium heat. Fry the eggs to your desired doneness. Place the sausage and apple hash on plates and top with a fried egg. Garnish with fresh parsley.
