Ingredients
- 200g Morcela, casing removed
- 2 medium potatoes, diced
- 1 apple, diced
- 1 small onion, chopped
- 2 tbsp olive oil
- 2 large eggs
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Steps
Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden brown and tender, about 10-12 minutes.
Add chopped onion and diced apple to the skillet. Cook until the onion softens and the apple is slightly tender, about 5 minutes.
Crumble morcela into the skillet and cook, stirring occasionally, until heated through and slightly crispy, about 5 minutes.
In a separate pan, fry eggs to your liking. Season hash with salt and pepper. Serve hash topped with a fried egg and fresh parsley.
Tips
Morcela's flavor intensifies as it cooks, so taste and adjust seasoning accordingly. For extra richness, add a knob of butter to the hash during the last few minutes of cooking.
