- 400g Morcela sausage
- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 2 medium apples, peeled, cored, and sliced
- 1 tbsp apple cider vinegar
- Fresh parsley, chopped, for garnish
Steps
Remove the morcela from its casing and slice into 1cm thick rounds.
Heat olive oil in a large skillet over medium heat. Add onions and cook until softened and golden, about 8 minutes.
Add apple slices to the skillet and cook until slightly softened, about 5 minutes.
Add morcela slices to the skillet and cook until heated through and slightly crispy, about 5 minutes per side. Deglaze the pan with apple cider vinegar. Garnish with fresh parsley and serve hot.
Tips
Morcela is already cooked, so you only need to heat it through. Be careful not to overcrowd the pan; cook in batches if necessary.
