Jeffrey Calleja opened this butcher shop in Attard in November 2018, after more than ten years running another butcher's counter. He has made Maltese sausage since he was twelve, and the shop appeared in Ainsley Harriott's ITV series on Maltese food, where Calleja was introduced as Malta's Butcher of the Year. Besides fresh cuts and zalzett, the counter sells ready-made dishes that go straight into the oven.

Zalzett tal-Malti is Malta's own pork sausage: coarse-ground shoulder and belly seasoned with sea salt, cracked black pepper and a large dose of coriander seed. Chopped parsley leaves green flecks in the pink filling, and many fresh batches get garlic too. The links are short and plump and come in long chains. In a village bar they arrive sliced, next to galletti crackers and peppered ġbejniet.
