The largest meat processor in Switzerland and the dominant industrial maker of Cervelat, the country's national sausage. Founded in Basel in 1869 by Samuel Bell-Roth, now part of the Coop group, Bell turns out Cervelat by the tens of millions each year — the smooth pork-and-beef links that Swiss households grill with both ends slit open to curl into horns over a campfire. The Cervelat recipe is protected by long habit rather than IGP: pork, beef, bacon, mild spice, a natural zebu casing, and a short cold-smoke over beech.
