Cranstons is a family butcher and food hall in Penrith, Cumbria, that has been making Cumberland sausage since 1914. The shop occupies a large retail space on the edge of town, with a working butchery counter at the back where the Cumberland is made daily in the traditional way: coarse-ground pork seasoned with black pepper, mace, and sage, packed into a continuous coil with no breadcrumb filler. The Cumberland sausage holds Protected Geographical Indication status, and Cranstons is one of the producers the designation was built around. The food hall sells the sausage by weight off the coil, and the counter also carries Cumbrian bacon, local cheeses, and the full range of the region's cured meats.
