Churrascaria Palace

Churrascaria Palace has been a Rio de Janeiro institution since 1955, a rodízio house in Copacabana where the linguiça arrives on a skewer alongside the parade of cuts that defines the Brazilian churrasco. The linguiça calabresa at Palace is grilled whole over charcoal until the casing blisters, then sliced tableside. In the rodízio format, it comes early and often, a signal that the kitchen is working. The dining room is large and formal in the old Brazilian way: white tablecloths, suited waiters, a buffet of salads and starters laid out along the centre of the room. Copa locals and tourists from the nearby hotels have been eating here the same way for seven decades.
