Au Pied de Cochon has been open every hour of every day since 1947, a 24-hour brasserie at 6 rue Coquillière in the Les Halles district of Paris. It was built to feed the market workers who unloaded produce at the old central market through the night, and the menu has never fully moved on from that original brief. The andouillette AAAAA is a permanent fixture: a 5A-certified tripe sausage grilled and served with a sharp mustard sauce or a Béarnaise. The AAAAA certification is awarded by the Association Amicale des Amateurs d'Andouillettes Authentiques, a tasting guild that certifies restaurants serving andouillette of genuine quality and traditional character. The brasserie is large, loud, and lit. Service runs through breakfast, lunch, dinner, and the hours in between without interruption. Reservations are possible but the room rarely turns people away.
