Northern Thailand's mountainous terrain and Lanna cultural traditions set it apart from the rest of the country. Chiang Mai, the region's largest city, is the center of sai oua production, a herbed grilled pork sausage packed with lemongrass, galangal, kaffir lime, and dried chili. It appears at every morning market, grilled over charcoal and served with sticky rice. The flavor profile owes more to Burmese and Yunnanese influences than to central Thai cooking.
