- 1 Zampone Modena
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 4 bay leaves
- 6 black peppercorns
- Water, to cover
- Salt, to taste
Steps
Rinse the Zampone Modena under cold water.
Place the Zampone in a large pot and cover with cold water.
Add the carrots, celery, onion, bay leaves, and peppercorns to the pot.
Bring the water to a simmer over medium heat. Reduce heat to low, cover, and cook for 3 hours, or until the Zampone is tender.
Remove the Zampone from the pot and let it rest for 10 minutes before slicing.
Slice the Zampone and serve hot. Season with salt to taste.
