Ingredients
- 400g Toulouse Sausage, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 cup chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Steps
Heat olive oil in a large skillet or Dutch oven over medium heat.
Add sausage and cook until browned on all sides. Remove sausage from skillet and set aside.
Add onion to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
Return sausage to the skillet. Add diced tomatoes, cannellini beans, chicken broth, and thyme. Bring to a simmer, then reduce heat and cook for 30 minutes, or until the sauce has thickened slightly.
Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
Tips
