- 400g Thüringer Rostbratwurst
- 2 cups cooked rice (day-old preferred)
- 200g sauerkraut, drained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- Fresh cilantro, chopped (for garnish)
Steps
Remove the sausage from casings. Crumble the sausage.
Sauté onion and bell pepper in sesame oil over medium heat until softened, about 5 minutes. Add garlic and red pepper flakes (if using). Cook for 1 minute more.
Push vegetables to one side of the pan. Crack eggs into the empty space. Scramble eggs until cooked. Mix with vegetables.
Add crumbled sausage, rice, and sauerkraut to the pan. Stir-fry until heated through and combined, about 5 minutes. Season with soy sauce. Garnish with cilantro before serving.
Tips
Day-old rice produces a better texture. Adjust soy sauce to your preference.
