Recipes with Sosis Bandari
The foundational recipe: sausages scored and simmered in a spiced tomato sauce with onions, bell peppers, garlic, turmeric, and curry powder. This is the version you find behind the glass counter at every Iranian sandwich shop. Serve it as a pan dish with bread, or use it as the filling for a sandwich.

Ingredients
- 4 Iranian beef hot dog sausages (sosis)
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 3 cloves garlic, minced
- 2 ripe tomatoes, chopped (or 150g canned)
- 2 tbsp tomato paste
- 1 fresh red chili, sliced
- 1 tsp turmeric
- 1 tsp curry powder
- 1/2 tsp black pepper
- Salt to taste
- 3 tbsp vegetable oil
- Fresh bread for serving
Steps
Score the sausages with three or four diagonal cuts on each side, about 5mm deep. Set aside.
Heat the oil in a wide pan over medium-high heat. Add the onion and fry, stirring, until the edges begin to brown, about 5 minutes.
Add the garlic, turmeric, and curry powder. Stir for 30 seconds until fragrant. Add the bell peppers and chili and cook another 3 minutes.
Add the tomato paste and stir it into the vegetables. Cook for 2 minutes, pressing it into the pan, until it deepens in color.
Add the chopped tomatoes and 100ml water. Stir, season with salt and black pepper, and bring to a simmer.
Add the scored sausages to the sauce. Simmer on medium-low heat for 10 minutes, turning the sausages once halfway through, until the sauce is thick and coats them.
Serve hot from the pan with fresh bread.
Tips
Iranian hot dog sausages (sosis) are the traditional choice and are made from beef or chicken. Regular beef frankfurters are a direct substitute. Do not use pork sausages. The scored cuts are not optional — they let the sauce flavor the meat rather than just coating the outside.
