Ingredients
- 2 Schüblig sausages
- 500g waxy potatoes (boiled day before, peeled)
- 2 eggs
- 40g butter
- Salt, pepper
- Optional: grated Gruyère
Steps
Coarsely grate the cold boiled potatoes. Season with salt.
Melt butter in a non-stick pan. Press potatoes into an even layer. Cook over medium heat 10-12 minutes until golden and crispy underneath.
Flip the Rösti (use a plate) and cook the other side until golden.
Meanwhile, score and pan-fry the Schüblig in another pan. Fry eggs in the remaining fat.
Serve the Rösti topped with sliced Schüblig and a fried egg.
Tips
Use day-old boiled potatoes, as freshly cooked ones are too moist for good Rösti. For extra crunch, add a handful of grated Gruyère to the potato mix.
