Ingredients
- 2 tbsp vegetable oil
- 200g Sai Oua, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 4 cups cooked rice, cold
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 2 eggs, lightly beaten
- 2 green onions, sliced
- Lime wedges, for serving
Steps
Heat vegetable oil in a large wok or skillet over medium-high heat. Add sliced Sai Oua and cook until browned, about 3-4 minutes. Remove sausage and set aside.
Add onion and garlic to the wok and cook until softened, about 2 minutes. Add diced bell pepper and cook for another 2 minutes.
Push vegetables to one side of the wok. Pour beaten eggs into the empty space and scramble until cooked. Mix eggs with vegetables.
Add cooked rice, soy sauce, fish sauce, and sugar to the wok. Stir fry until rice is heated through and evenly coated with sauce. Return Sai Oua to the wok. Garnish with green onions and serve with lime wedges.
Tips
Adjust the amount of fish sauce to your taste. For extra heat, add a pinch of chili flakes.
