- 300g Mortadella, cubed
- 50g pistachios, shelled
- 2 cloves garlic
- 50g Parmesan cheese, grated
- 120ml olive oil
- Salt and pepper to taste
- 400g pasta (penne or rigatoni)
- Fresh basil leaves, for garnish
Steps
Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
While pasta cooks, make the pesto. Combine mortadella, pistachios, garlic, Parmesan, and olive oil in a food processor. Process until smooth, adding pasta water as needed to reach desired consistency.
Season pesto with salt and pepper. Toss cooked pasta with pesto, adding more pasta water if needed to coat the pasta evenly.
Serve immediately, garnished with fresh basil leaves.
