- 400g Morcilla Argentina, casing removed
- 2 tbsp olive oil
- 2 medium apples, peeled, cored, and diced
- 1 small onion, diced
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 large eggs
- Fresh parsley, chopped (for garnish)
Steps
Crumble the morcilla.
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add the apples and cook until slightly softened, about 5 more minutes. Stir in the smoked paprika.
Add the crumbled morcilla to the skillet. Cook, stirring often, until heated through and browned, about 5 minutes. Season with salt and pepper. Fry the eggs to desired doneness. Serve the morcilla and apple hash topped with a fried egg and fresh parsley.
Tips
For extra flavor, add a splash of apple cider vinegar to the hash before serving. Adjust paprika to taste.
