- 200g Lorne Sausage, cut into 1/2-inch cubes
- 500g potatoes, peeled and diced
- 1 medium onion, chopped
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 large eggs
- 1 tbsp chopped fresh parsley, for garnish
Steps
Heat olive oil in a large skillet over medium heat. Add potatoes and onion; cook until potatoes are tender and browned, about 15 minutes. Stir occasionally.
Add cubed Lorne sausage and smoked paprika to the skillet. Cook until sausage is browned and heated through, about 5 minutes.
