- 500g beef mince (15-20% fat)
- 250g pork mince (20-25% fat)
- 100g rusk
- 150ml cold water
- 1 tbsp ground coriander
- 1 tbsp ground white pepper
- 1 tsp ground nutmeg
- 1 tsp salt
Steps
Combine beef and pork mince in a large bowl. Ensure even distribution.
Add rusk, water, coriander, white pepper, nutmeg, and salt to the bowl. Mix well with your hands until all ingredients combine fully.
Shape the mixture into a square or rectangular block. Wrap tightly in cling film.
Refrigerate for at least 4 hours, or preferably overnight, to firm up. Slice into approximately 1cm thick portions. Cook in a hot pan over medium heat for about 5-6 minutes per side, until browned and cooked through.
