Ingredients

  • 400g Longaniza Chilena
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (400g) can cannellini beans, rinsed and drained
  • 150g spinach
  • Salt and pepper to taste
  • 4 eggs
  • Optional: Fresh parsley, chopped, for garnish

Remove the sausage from its casing and crumble it.

Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.

Add crumbled longaniza to the skillet and cook until browned, about 8 minutes. Stir in cannellini beans and spinach, cooking until spinach wilts.

Season with salt and pepper. Make four wells in the hash and crack an egg into each. Cover and cook until eggs are set to your liking. Garnish with fresh parsley, if desired.

Tips

For a spicier hash, add a pinch of red pepper flakes along with the garlic.
