Ingredients
- 400g Kiszka, sliced
- 2 medium apples, diced
- 1 small onion, chopped
- 500g cooked potatoes, diced
- 2 tbsp olive oil
- 2 large eggs
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Steps
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add diced apples and cook for another 5 minutes, until slightly softened.
Add sliced kiszka and diced potatoes to the skillet. Cook, stirring occasionally, until heated through and potatoes are crispy, about 10 minutes.
Fry eggs in a separate pan to your liking. Serve the kiszka hash topped with a fried egg and fresh parsley.
Tips
Kiszka has a tendency to stick, so use a well-seasoned cast iron pan or non-stick skillet. Do not overcrowd the pan, or the potatoes will steam instead of crisping.
