Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 400g Kabanosy, sliced
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 (400g) can diced tomatoes
- 2 (400g) cans cannellini beans, rinsed and drained
- 4 cups chicken broth
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Steps
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
Add garlic and Kabanosy. Cook for another 3 minutes, stirring occasionally, until the sausage begins to brown.
Stir in smoked paprika and thyme. Add diced tomatoes, cannellini beans, and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
Stir in lemon juice. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Tips
Kabanosy's intense flavor means you need few other spices. Adjust the amount of smoked paprika to your preference; some may prefer a more subtle smokiness.
