Ingredients
- 400g Ispíní sausages
- 1 kg potatoes, peeled and quartered
- 200g cabbage, shredded
- 150ml milk
- 50g butter
- Salt and pepper to taste
- 2 tbsp vegetable oil
Steps
Boil potatoes in salted water until tender. Drain and mash.
Cook cabbage in boiling water for 5 minutes. Drain well and add to the mashed potatoes.
Heat milk and butter in a saucepan. Stir into the potato and cabbage mixture until smooth and creamy. Season.
Fry Ispíní sausages in oil over medium heat until browned and cooked through. Serve with colcannon.
Tips
Ensure the cabbage is well-drained to prevent a soggy colcannon. For extra flavor, add some chopped scallions to the colcannon.
