- 400g Haggis, casing removed
- 500g Potatoes, diced
- 1 medium Onion, chopped
- 2 tbsp Olive Oil
- 2 Eggs
- Salt and Pepper to taste
- 2 tbsp fresh Parsley, chopped (optional)
Steps
Dice the potatoes and chop the onion. Remove the haggis from its casing and crumble it.
Heat olive oil in a large skillet over medium heat. Add potatoes and onions; cook until potatoes are tender and browned, about 15 minutes. Stir occasionally.
Add the crumbled haggis to the skillet. Cook until heated through and slightly browned, about 5 minutes. Season with salt and pepper.
Fry the eggs to your liking. Serve the haggis and potato hash topped with a fried egg. Garnish with fresh parsley, if desired.
