Ingredients
- 2 Frankfurter Würstchen, sliced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
- Crusty bread, for serving
Steps
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
Add vegetable broth and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
Remove the pot from heat. Add the sliced Frankfurter Würstchen and let them warm through in the residual heat for 3 minutes. Do not simmer or boil — the casing will burst.
Season with salt and pepper. Serve hot with crusty bread.
Tips
Adjust the amount of broth depending on desired soup consistency. Never brown or fry Frankfurter Würstchen — grilling or pan-frying destroys what makes the sausage worth eating.
