- 400g Farmers Sausage, casings removed
- 2 medium apples, peeled, cored, diced
- 1 large onion, diced
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 large eggs
- Fresh parsley, chopped (for garnish)
Steps
Crumble farmers sausage into a large skillet over medium heat. Cook until browned, about 8 minutes, then remove from the skillet and set aside.
Add olive oil to the skillet. Add diced onion and apples. Cook until softened, about 7 minutes.
Return cooked sausage to the skillet with the apples and onions. Season with thyme, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
Fry eggs in a separate pan to desired doneness. Serve the hash topped with a fried egg and garnish with fresh parsley.
