- 400g Chorizo Mexicano, casing removed
- 2 medium sweet potatoes, peeled and diced
- 1 large onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 large eggs
- Fresh cilantro, chopped (for garnish)
Steps
Heat olive oil in a large skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until browned.
Add onion, sweet potato, and bell pepper to the skillet. Cook until sweet potatoes are tender, about 15 minutes.
Stir in garlic and smoked paprika. Season with salt and pepper. Cook for another minute.
Make four wells in the hash. Crack an egg into each well. Cook until eggs are set to your liking. Garnish with fresh cilantro and serve.
Tips
Chorizo Mexicano releases a good amount of flavorful oil. Drain some off if the hash seems too greasy. Adjust the smoked paprika amount to control the smokiness.
