- 200g Chorizo Mexicano, casing removed
- 4 large eggs
- 2 tbsp milk or cream
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Optional: chopped cilantro, diced onion, salsa
Steps
Heat the oil in a skillet over medium heat. Crumble the chorizo into the skillet and cook, breaking it up with a spoon, until browned and cooked through.
In a separate bowl, whisk together the eggs, milk (or cream), salt, and pepper.
Pour the egg mixture into the skillet with the chorizo. Cook, stirring occasionally, until the eggs are set but still slightly moist.

Tips
