- 4 bell peppers (various colors)
- 400g Cajun Boudin, casings removed
- 1 cup cooked rice
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1/4 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Steps
Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
In a large skillet, heat olive oil over medium heat. Add onion and celery; cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in the boudin, cooked rice, and Cajun seasoning. Mix well. Add chicken broth to moisten the mixture. Season with salt and pepper.
Stuff each bell pepper with the boudin mixture. Place in a baking dish and bake for 30 minutes, or until peppers are tender.
