Ingredients

  • 4 bell peppers (various colors)
  • 400g Cajun Boudin, casings removed
  • 1 cup cooked rice
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1/4 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Steps

1

Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Set aside.

2

In a large skillet, heat olive oil over medium heat. Add onion and celery; cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.

3

Stir in the boudin, cooked rice, and Cajun seasoning. Mix well. Add chicken broth to moisten the mixture. Season with salt and pepper.

4

Stuff each bell pepper with the boudin mixture. Place in a baking dish and bake for 30 minutes, or until peppers are tender.

Tips

Ensure the boudin is evenly distributed throughout the rice for a balanced flavor. Add a sprinkle of cheese on top during the last 5 minutes of baking for extra richness.
