Ingredients
- 2 St. Galler Bratwurst
- 500g waxy potatoes (boiled the day before, peeled)
- 40g butter
- Salt and pepper
- 1 tbsp oil
Steps
Coarsely grate the pre-boiled potatoes. Season with salt and pepper.
Heat butter and oil in a non-stick pan over medium heat. Spread the grated potatoes evenly and press down gently into a flat cake.
Cook for 10-12 minutes until the bottom is golden and crispy. Flip carefully (use a plate if needed) and cook the other side for another 8-10 minutes.
Meanwhile, grill the Bratwurst in a separate pan over medium heat for 10-12 minutes until golden all around.
Slide the Rösti onto a plate, place the Bratwurst on top. Serve immediately.
Tips
The secret to great Rösti is using potatoes cooked the day before, as they lose moisture overnight and get crispier. Don't stir the Rösti while cooking, let the crust form undisturbed.
