  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 medium apples, peeled, cored, and diced
  • 1/4 cup apple cider
  • 1 tbsp fresh thyme leaves

  • 4 large eggs
  • 1 tbsp butter
  • Fresh parsley, chopped, for garnish

Crumble the Boudin Blanc into a large bowl. Set aside.
