Ingredients

  • 200g Black Pudding, sliced
  • 2 medium apples, diced
  • 2 medium potatoes, diced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 large eggs
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (optional)

Steps

1

Heat olive oil in a large skillet over medium heat. Add potatoes and onion. Cook until potatoes soften and brown, about 10 minutes.

2

Add diced apples and sliced black pudding to the skillet. Cook for another 5-7 minutes, stirring occasionally, until apples are tender and black pudding is heated through.

3

While the hash cooks, fry eggs in a separate pan to your liking.

4

Divide the black pudding and apple hash between two plates. Top each with a fried egg. Garnish with fresh parsley, if desired. Serve immediately.

Tips

Black pudding can dry out easily. Add a tablespoon of butter to the pan toward the end of cooking to keep it moist. Do not overcook.
