Ingredients

  • 4 large bell peppers (various colors)
  • 400g Bangers sausage, casings removed
  • 500g potatoes, peeled and cubed
  • 100ml milk
  • 50g butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 50g grated cheddar cheese

Preheat oven to 200°C (400°F). Halve the bell peppers lengthwise and remove the seeds. Parboil the potato until tender. Drain and mash with milk and butter. Season.

Brown the sausage in a pan, breaking it up with a spoon. Sauté the onion and garlic in olive oil until softened. Combine the sausage, onion, and garlic.

Mix the sausage mixture with the mashed potatoes. Stuff the bell pepper halves with the sausage and mash mixture.

Top with grated cheddar cheese and bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and golden. Serve hot.

Tips

Ensure the sausage is cooked through before mixing it with the mashed potatoes. Pre-cooking the peppers slightly can shorten baking time.
