The Nicolet family runs one of the largest traditional tuyés in the Haut-Doubs, a 17-meter-high timber chimney in the village of Gilley near Morteau. Inside, Morteau and Montbéliard sausages hang over smoldering spruce and juniper for 48 hours to pick up the resinous smoke that defines both IGPs. The rest of the pork operation shares the same flue: hams, bacon, the rare Cendrée sausage. The tuyé is open to visitors year-round, with a shop and tasting room at ground level. It is the closest most people will get to seeing a medieval-style farmhouse smokehouse still doing its original job.
